Pai Mu Tan is one of the most popular and well known white teas. It is made from unopened buds picked with two or three tender young leaves. Leaves range from white to light green and brown in colour. The pale yellow infusion has a soft, velvety flavour with a hint of nuttiness and a sweet muscatel aroma.

About: White tea leaves are not fermented or processed but rather left to dry naturally in the sun. The high proportion of buds, with their silver fuzz, result in a white or light coloured tea. Brew very lightly for a smooth, fresh taste. A longer brew produces a sharper flavour.
Brewing: Always use freshly boiled water. The taste will vary depending on the amount of tea used and how long it is steeped. Longer = stronger. If left too long the tea may also turn bitter.
