Ti Kuan Yin "Iron Goddess"

The Iron Goddess of Mercy is probably the best known Chinese Oolong. As it is brewed, the leaves unfurl to give a lace-edged look, creating a honey-coloured brew, a sweet floral aroma and an orchid-like smooth, delicate flavour.

About: Translated as ”The Iron Goddess Of Mercy” , legend tells us that it was named by a tea grower after the iron statue of the Goddess of Mercy, Guanyin. It originated in the 19th century in Anxi, Fujian Province.

Brewing: Always use freshly boiled water. The taste will vary depending on the amount of tea used and how long it is steeped. Longer = stronger. If left too long the tea may also turn bitter.
