This Chinese green tea is named after the village (Longjing/Lung Ching) where it is produced and it is one of the world’s most famous teas. It is produced mostly by hand and is renowned for its high quality. It's long flat leaves are often called bird tongue, they provide a pale yellow infusion finishing in a sweet, smooth taste.

Brewing: Always use freshly boiled water. The taste will vary depending on the amount of tea used and how long it is steeped. Longer = stronger. If left too long the tea may also turn bitter.
